
I love me some good ole southern cooking! I think chicken and dumplings is a southern dish. Honestly, I’m not sure, but I love it! I took this classic dish and tweaked it to make it healthier. I switched out the heavy cream for 2% milk, you could also use skim or almond if you prefer. I also loaded this dish up with more veggies and protein to add those extra macros our body needs. The real calorie jerker here comes from the dumplings. Now, I didn’t skimp on the dumplings and I used regular flour too. This is because I’m usually okay with portion control. If you think you’re one of those people that will eat all the dumplings in one sitting, then cut the dumpling recipe in half! Another good way of making the dumplings a little healthier is by using whole wheat or buck wheat flour instead. You will hear me say this a lot with my recipes, make it your own!
