
A Healthy Whipped Ricotta and Arugula Salad Perfect For Spring.
I love a good salad and you will never find a shortage of salad recipes on my blog. This recipe has a creamy feel with all the wholesome ingredients your body loves! The arugula has a bit of peppery bite, while the ricotta gives the salad a creamy finish.
Arugula: this leafy green contains calcium, potassium, folate, and vitamin C, K, and A.
Ricotta: is an Italian cheese that is considered one of the more healthier cheeses. It contains mainly whey protein which gives the human body a large amount of amino acids that it needs.
I used my Kitchen Aid food processor to blend up the dressing for this salad. If you don’t already have a food processor for your kitchen, get one! It is an essential tool for your kitchen and you will find how much easier it makes your life. I love my Kitchen Aid mixer, because it really gets the job done. The only complaint I have is the size. I got their smaller food processor, which does a great job, but I can’t do any foods in large quantities. So, if you are someone that cooks for a family or large groups, opt. for their larger food processor. Ingredients
- Whipped Ricotta Cheese
1 cup ricotta cheese
2 tsps olive oil
1/8 tsp salt
- Dressing
1 cup packed fresh basil leaves
2 tbsps pine nuts, toasted
2 tbsps white balsamic vinegar
1/2 tsp salt
1/4 tsp pepper flakes
3 tbsps olive oil
- Salad
1 cup cherry tomatoes, halved
18 snap peas, cleaned and cut in half
3 cups baby arugula
